The most common cause is Vibrio vulnificus, a bacterium that thrives in warm seawater and can cause life-threatening septicemia when ingested through raw or undercooked oysters. Another risk is paralytic shellfish poisoning from saxitoxin, produced by certain algae that oysters filter from water.

Who Is Most at Risk

People with weakened immune systems, chronic liver disease, diabetes, or hemochromatosis face the highest risk of severe outcomes from Vibrio infections. Older adults and those taking immunosuppressive medications are also more vulnerable. Even healthy individuals can become seriously ill if they consume contaminated oysters in high-risk conditions.

Prevention and Safety Measures

Cooking oysters thoroughly to an internal temperature of at least 145°F (63°C) kills most harmful bacteria and viruses. Avoiding raw oysters during warm months, checking local shellfish advisories, and purchasing from regulated sources reduce risk.
